Once the maple sugaring season ends, we tap birch trees and collect deliciously sweet birch sap. Because it takes about 110 gallons of sap to make a single gallon of birch syrup, we keep it cool until the end of the season when we boil it down daily until it reaches a dark, sweet birch syrup!
