Here's what you'll need:
Pastry for a 9inch double crust pie
1 pound fresh rhubarb, chopped
2 pints of fresh strawberries, chopped
1 cup white sugar
½ cup all purpose flour
2 Tbsp butter
1 egg yolk
2 Tbsp white sugar
Instructions:
Preheat oven to 400 degrees F (200 degrees C)
In a large bowl, mix together the flour and sugar. Add strawberries and chopped rhubarb. Let stand for 30 minutes to allow the sugars to work its magic.
Place the bottom pie crust into a pie pan.
Pour fruit mixture (filling) into pie crust. Dot top with butter and cover with top crust.
Apply yolk to top of pie, using a pastry brush. Sprinkle with sugar. Cut small holes in top to let steam escape if not making a lattice top crust.
Bake at 400 degrees F (200 degrees C) for 35 to 40 minutes, or until bubbly and brown.
*Baking Tip For Easy Clean Up* It's a good idea to place a parchment paper covered baking sheet on the rack below the pie to catch any juices that bubble over!
Once the pie is finished, let it cool and serve with a scoop of your favorite ice cream!!
