Vermont Wild Birch Syrup
A portion of our birch sap is kept cold until the end of the season when we boil it daily until it turns into a dark, sweet birch syrup. It takes about 110 gallons of birch sap to make one gallon of birch syrup!

Sap from the birch tree is collected in the spring just like sap from a maple tree!


Vermont Wild Birch Water
Fresh birch sap is boiled down to about 1/3 of its original volume or until the sugar content is about 3%. The sap is then strained and bottled to make Birch Water, a deliciously sweet and refreshing summer beverage!
